SUMMARY:

The present study aimed to assess the storage duration of eggs from light laying hens at peak laying age (24 to 42 weeks) and post-peak age (48 to 60 weeks). Eggs were collected onsite on the day of oviposition and then packed in cardboard boxes for transportation to UFAPE for evaluation. A total of 120 eggs for each age group were weighed using a digital scale and allocated for assessment at storage intervals of 0 (collection day), 7, 14, and 21 days. Storage was conducted at room temperature. On each assessment day, 30 eggs were utilized to measure egg weight, Haugh unit, yolk index, yolk color, yolk pH, and albumen and shell thickness. Data regarding bird age and shelf life were analyzed using factorial analysis, considering bird age versus egg storage duration. The results indicated that during the peak laying phase, longer storage durations and older bird age had a negative impact on egg quality, as well as when an interaction between the two factors was observed. Similarly, during the post-peak phase, both the age of the hens and egg storage duration influenced the quality of the product negatively, consistent with the combined analysis of these two factors.
